So nice, you’ll want to make it twice!  This creamy cold banana “nice cream” is the perfect treat for a hot afternoon.  It’s potassium-packed with no added sugars, making it a healthier alternative to regular ice cream.  It is super easy to make with the help of a blender.

Vegan Adaptive

Ingredients:

  • 2-3 large bananas, thinly sliced and frozen (about 4 cups)
  • 2-3 tablespoons of milk (or dairy-free milk of your choice)
  • ½ tsp vanilla extract

Directions:

  1. The day before you plan on making nice cream: slice up bananas and freeze overnight.
  2. To make the nice cream:  Place milk and vanilla in a blender, followed by the frozen bananas.  Blend for 2 minutes, scraping down the sides as necessary.
  3. Serve immediately for a soft-serve style texture.  If you prefer a harder, ice cream texture, place the mixture into a container and freeze for an hour, then scoop and enjoy!

Make it your own!  Try one of these flavor combinations:

  • Chocolate Mint Chip: replace ½ tsp vanilla with ¼ tsp mint extract.  Then add 4 tbsp unsweetened cocoa powder and ¼ cup of mini chocolate chips.
  • Mango: replace 1 cup of frozen banana with 1 cup of frozen mango
  • Peanut Butter: add ¼ cup of peanut butter and 2 tablespoons of honey

Notes and Tips:

  1. Don’t throw out those overripe bananas!  Thinly slice them, then freeze them to use for nice cream, smoothies, banana bread, or other recipes.
  2. This recipe works best when the bananas are really cold.  It’s best if you take them right from the freezer to the blender with no wait time on the counter.
